Understand the stacked arrangement
Weber lists two cooking grates, a water pan, adjustable dampers, a removable fuel door and a silicone temperature probe grommet. The 18 inch model has a stated total cooking area of 481 square inches.
That total describes two levels. It is not a single 481 square inch surface. Consider how you will reach the lower food while another item occupies the grate above it. A menu needing frequent turning or basting on both levels may be a different fit from two roasts that can stay in place for longer stretches.
Buy it for smoking, then compare the kettle
The vertical layout is the reason to put this model on a smoking shortlist. If your usual meal is burgers followed by corn over direct heat, also compare a 22 inch kettle. Its round grate and fire arrangement answer a different question from stacked smoking space.
The kettle owner notes describe use of a Weber kettle whose exact model is unknown. They are not a test of this Smokey Mountain, and owning one Weber cooker does not establish experience with the other.
The vents are part of the cooking routine
This is a charcoal cooker with manual damper adjustment. Decide whether you want to learn that response or would prefer the powered airflow arrangement of a Gravity Series 600. We have not compared temperature stability or tending time between them.
Read the model instructions before choosing fuel, adding water or setting the dampers. A lid thermometer measures at the lid. Plan a suitable chamber probe and a food thermometer for the measurements you actually need. The probe grommet provides a route for a compatible probe, not a food temperature reading by itself.
Plan the cleanup and the reach
The water pan creates another part to handle and clean after the cook. Check the maker's cooling and cleaning instructions before lifting grates or dealing with the pan and ash. Think through where those parts will go as you work.
For placement, check the full assembled dimensions and required clearances. A narrow body still needs room for the lid, fuel door, your hands and the food. Test the reach to the lower grate in a store if possible, and check the fit of long cuts rather than judging by diameter alone.
A sensible first menu to plan
Use smoked chicken thighs or pulled pork to think through grate placement and thermometer access. Keep slaw or another cold side separate while learning the cooker. Follow the recipe's temperature checks and use the meal planner to avoid cooking extra simply to fill both grates.
