A little order before supper
Ready at Six
Choose the meal, then choose when you want to eat. Get a practical order for the cooking, a shopping list and the recipes together. Six is a suggestion. The thermometer gets the final word.
Each plan uses one full batch of each recipe for two adults. The times leave room to work through the preparation, but equipment and food thickness can change the finish. Changing the serving time moves the timetable. It does not make the food cook faster.
Each timetable below is set for 6:00 PM on the serving day.
The meal packet includes the selected timetable, full recipe ingredients, equipment, methods and notes. Print it on paper or choose Save as PDF in your browser. Ingredient checkmarks stay on this page until you reload.
Menu 01 · Two plates, one steak
A shared steak supper
A thick strip steak, cold mustard potato salad and a crisp cucumber salad. Make the cold sides first so the last few minutes belong to the steak.
- One Strip Steak for Two, Smoked Then SearedOne batch makes two main portions
- Small Batch Mustard Potato SaladOne batch makes two side portions
- Cucumber, Radish and Dill SaladOne batch makes two side portions
Smoker at 250°F, a separate hob with a heavy skillet, saucepan, shallow dish, refrigerator, clean board, tongs and a food thermometer.
This plan uses the smoker and skillet at the same time near the finish. Use fully thawed steak of the thickness in the recipe.
Hands on means preparation or close attention.
Cooking or chilling is elapsed time. Check the food while other work carries on.
Buffer gives a late dish some room. It is separate from resting.
to Hands on · 10 minutes
Start with the potatoes
Read the recipes, cut the potato salad potatoes and measure the dressing. Have a shallow dish and room in the refrigerator ready. Buy only the listed single batches for this timetable.
to Heating and simmering · Allow 30 minutes
Simmer the potato salad potatoes
Bring the potatoes and cold water to a boil, then simmer for about 12 to 16 minutes as the recipe describes. This slot includes time for the water to heat. Check for tenderness and mix the dressing while the potatoes cook.
to Hands on · About 10 minutes
Dress warm, then refrigerate promptly
Drain and dress the potatoes as directed. Transfer promptly to a shallow dish in the refrigerator. Keep the celery and scallion separate for the finish. Do not wait for the potatoes to cool on the counter.
to Chilling · At least 1 hour and until cold
Give the cold side time
Chill until cold throughout at 40°F or below. A deeper dish can take longer. If it is not cold when the steak is ready, leave it in the refrigerator and serve the cucumber salad with the steak.
to Preheating · Allow 20 minutes
Warm the smoker
Set up for 250°F and verify the cooking area with a thermometer. Start this earlier if your smoker needs longer to settle at temperature.
to Hands on · 10 minutes
Prepare the steak and its clean landing spot
Pat dry and season the fully thawed steak. Set out clean tongs and a board for the cooked steak. Clean the work area before preparing the salad.
to Hands on · 10 minutes
Prepare the cucumber salad
Slice the vegetables and mix the dressing. Refrigerate them separately, as the recipe describes. Keep both cold until serving.
to Cooking window · Allow up to 65 minutes
Smoke, then sear without a pause
The recipe estimates 30 to 50 minutes in the smoker, followed by about 5 to 10 minutes in the skillet. Check early and heat the skillet as the steak approaches its intermediate 120°F to 125°F reading. Transfer straight to the hot skillet and continue to at least 145°F before removal. Never wait for a printed clock time with partly cooked steak.
to Rest · At least 3 minutes
Rest after the steak reaches 145°F
The rest starts when the safely cooked steak leaves the heat, even if that is earlier or later than this slot. Wait at least 3 minutes before slicing. The buffer below never replaces this rest.
to Buffer · 12 minutes
A little room for a slow finish
Use this space if the steak needs longer to reach its temperature. If the food is ready sooner, serve after the required rest. Do not hold partly cooked steak to keep this timetable. Finish the cold sides once the steak no longer needs your attention.
Your intended serving time
Slice and bring the sides out
Fold the celery and scallion into the cold potato salad. Dress the cucumber salad. Share the steak between two plates. If cooking takes longer, move dinner rather than shortening the safe cooking or rest.

Menu 02 · Give the grill two jobs
Lemon chicken from the grill
Boneless lemon oregano thighs, broccoli with lemon crumbs and cucumber salad. The chicken and broccoli share a 400°F grill, while the cold salad waits in the refrigerator.
- Lemon Oregano Chicken Thighs for TwoOne batch makes two main portions
- Charred Broccoli with Lemon CrumbsOne batch makes two side portions
- Cucumber, Radish and Dill SaladOne batch makes two side portions
Grill with hot and cooler areas, small skillet, covered containers, clean plates, separate tools for raw chicken and vegetables, and a food thermometer.
Leave enough separate grate space for both dishes. If the grill is small, cook the broccoli first and keep it hot at 140°F or above while the chicken cooks. Allow more time for that sequence.
Hands on means preparation or close attention.
Cooking or chilling is elapsed time, with checks along the way.
Rest and buffer have separate jobs.
to Hands on · 10 minutes
Mix the chicken dressing
Reserve the recipe's clean tablespoon of dressing before anything touches raw chicken. Cover and refrigerate it. Coat the fully thawed chicken with the remaining dressing and refrigerate in a covered container. Clean the work area and tools.
to Refrigerated marinade · 30 minutes
Keep the chicken cold
Marinate in the refrigerator for 30 minutes. Keep it refrigerated afterward while the grill heats. The reserved serving dressing stays separate from the raw chicken.
to Hands on · 10 minutes
Get the cold side ready
Prepare the cucumber salad vegetables and dressing. Refrigerate them separately until serving. Work on a clean board away from the raw chicken.
to Hands on · 10 minutes
Prepare the broccoli and crumbs
Cut and season the broccoli as directed. Toast the crumbs in the small skillet for about 2 to 3 minutes. Keep the broccoli chilled and the finished crumbs dry until the grill is ready.
to Preheating · Allow 20 minutes
Make space for both dishes
Preheat the grill to about 400°F with a cooler area available. Keep the vegetables in a separate clean area without raw chicken or its drips above them. Use separate tongs. Allow extra preheating time for your setup if needed.
to Cooking · About 10 to 16 minutes
Grill the chicken
Discard the used marinade and grill as the recipe describes. Check the thick center of every piece for at least 165°F. Move away from direct flame if it browns too quickly. A timer cannot confirm doneness.
to Cooking · About 10 to 15 minutes
Grill the broccoli beside it
Use the separate clean area and vegetable tongs. Turn as directed and move to the cooler area if it colors before the stems soften. Watch both dishes rather than walking away during this overlap.
to Rest · 5 minutes
Rest the cooked chicken
Once each piece reaches 165°F, transfer it to a clean plate for the recipe's 5 minute rest. This is a serving step. It does not replace cooking to the safe temperature.
to Buffer · 9 minutes
Finish the plate, or give it longer
If a dish needs more cooking, use this space and move dinner later if necessary. When everything is cooked, serve sooner if you like. Keep finished hot food at 140°F or above if you wait.
Your intended serving time
Add the last bright bits
Spoon the reserved clean dressing over the chicken. Finish the broccoli with its lemon crumbs and dress the cucumber salad. Divide between two plates.

Menu 03 · Leave the grill covered
Stuffed peppers, with tomorrow in mind
Beef and rice stuffed peppers with cucumber salad. This is the oven option. The pepper recipe makes four main portions, so dinner for two leaves two stated portions to put away promptly.
- Beef and Rice Stuffed PeppersOne batch makes four main portions, including two extra for this menu
- Cucumber, Radish and Dill SaladOne batch makes two side portions
Oven at 375°F, saucepan, skillet, large baking dish, foil, wide spatula and a food thermometer. Have shallow containers ready for the extra pepper portions.
The rice, peppers and filling have separate cooking stages. Read the method before heating the oven.
Hands on includes the filling and assembly.
Cooking overlaps only where the oven or saucepan can do the work.
Buffer leaves a little room after the planned rest.
to Hands on · 10 minutes
Prepare the cucumber salad first
Slice the vegetables and prepare the dressing before handling raw beef. Cover and refrigerate them separately. Leave the final tossing until dinner.
to Hands on · 20 minutes
Set out the filling ingredients
Measure the rice, water, tomatoes, sauce and seasonings. Chop the onion and garlic. Set out the baking dish and foil. Heat the oven to 375°F, giving your oven longer if it needs it.
to Cooking and standing · About 20 to 25 minutes
Cook the rice, then let it stand
Use the rice package directions, usually 15 to 20 minutes cooking followed by 5 minutes covered standing. The cooked rice goes into the filling. Do not add dry rice directly to the peppers.
to Hands on · 10 minutes
Prepare the pepper halves
While the rice simmers, halve and clean the peppers. Arrange the eight halves in the baking dish, add the listed water and cover with foil.
to Cooking · 15 minutes
Soften the peppers in the oven
Bake covered for the recipe's initial 15 minutes. Use this elapsed time to clear the work area and get the skillet ready.
to Hands on cooking · Allow 15 minutes
Cook the beef and onion
Break the beef into small pieces as it cooks. Check several areas for at least 160°F, then drain excess fat and add the garlic as directed. This is a working allowance, so continue if the beef needs longer.
to Hands on · About 10 minutes
Finish the filling and assemble
Simmer the tomato mixture for about 5 minutes. Fold in the cooked rice and the listed cheese, then divide the hot filling between the softened pepper halves. Return them to the oven without setting the filling aside.
to Cooking · About 25 to 35 minutes
Bake covered, then add the cheese
Bake covered for about 20 to 25 minutes. Uncover, add the remaining cheese and bake for another 5 to 10 minutes. Check the center of several filled halves for at least 165°F. Keep cooking if they need longer.
to Rest · 5 minutes
Let the cooked filling settle
Once the filling reaches 165°F, rest the peppers for 5 minutes. Set out a wide spatula and clean plates.
to Buffer · 10 minutes
Leave room for the oven to run late
Use this space for extra cooking if needed. If the peppers are ready sooner, serve after the rest. Keep finished hot food at 140°F or above if you wait. The clock is a plan, not a temperature check.
Your intended serving time
Serve two, then put the extra away
Toss the cucumber salad. Start with two pepper halves per person. Transfer the remaining portions promptly to shallow containers and refrigerate. Reheat leftovers to 165°F.

The clock never gets the deciding vote
These are manual plans for the listed single batches. More food, a different cut or another appliance needs a fresh timing check. Follow the recipes, use a thermometer and move dinner later when the food needs longer.
Keep cold food at 40°F or below and hot food at 140°F or above. Refrigerate perishables within 2 hours, or within 1 hour above 90°F. A timing buffer is not a safe holding method. See USDA's cooking temperature chart and serving and leftover guidance.
