A smaller table, a proper supper

Dinner for two

You do not need a whole pork shoulder every time you light the grill. Start with one main, give the sides a job and know what the recipe will leave you.

Some dinners leave two portions for tomorrow. That should be a choice. The steak and chicken menus use recipes written for two. The pepper menu keeps its full four portion batch and shows the extra up front.

These menus start with two adults, regular main portions and no additional leftovers allowance. Serving counts are estimates. The planner keeps full recipe batches rather than quietly shrinking a method that was written for a larger pan.

A shared steak supper

One steak, two plates

A thick strip steak gets smoked, then seared. Make the potato salad ahead and leave the cucumber dressing separate until supper. The cold sides free you up for that last few minutes at the skillet.

What one batch gives you
Two main portions, two potato salad portions and two cucumber salad portions.
Extra from batch size
No extra stated portions. Your appetites and the actual steak still affect what is left.
Plan around
A smoker, a separate hob and heavy skillet. Start the potato salad well ahead so it can chill for at least an hour and until cold throughout.

Give the grill two jobs

Lemon chicken and a little char

Boneless thighs and broccoli cook on the same grill at about 400°F. The cucumber salad adds a cold side without another pan. Keep clean serving dressing separate before the marinade touches raw chicken.

What one batch gives you
Two main portions, two broccoli portions and two cucumber salad portions.
Extra from batch size
No extra stated portions. Add a deliberate second batch if you want another dinner.
Plan around
Thirty minutes of refrigerated marinating, room for separate chicken and vegetable areas on the grill, and a thermometer check for every piece of chicken.

The oven option

Stuffed peppers, with tomorrow in mind

Beef, rice and tomatoes make the main dish, so a crisp cucumber salad can be enough alongside it. This menu keeps the existing pepper recipe intact. Make the full dish and put the extra portions away promptly.

Two people does not always mean half a recipe

A whole pie, a tray of sliders and a large pork shoulder can make sense when you want another meal. They are a poor surprise when you only wanted supper. These menus use small recipe yields where available and say plainly when a full batch gives you extra.

If you choose a heartier appetite or request leftovers in the planner, you may need another complete batch. The timetable here covers the original single batches. Extra food needs its own equipment space and timing check.

Refrigerate extra food promptly in shallow containers. Keep cold food at 40°F or below and reheat leftovers to 165°F. USDA's leftover guidance covers cooling, storage and reheating.
