Plan full batches before buying

A starting menu for twelve adults
DishFull batchesResult
Ginger lime chicken skewers612 main portions, using 4½ pounds raw thighs and 24 chicken skewers, with separate vegetable skewers
Smoky baked beans2About 16 side portions, leaving about 4 extra
Black eyed pea and corn salad312 side portions

This is a menu quantity example, not a claim that an unidentified kettle holds all twenty four chicken skewers and the vegetables at once. Appetite and the rest of the table can change what you need.

Check capacity before cooking day

  1. Measure the usable grate and count how many empty skewers fit with enough space to turn them. Leave a cooler area for food that browns early.
  2. Keep chicken and vegetables on separate skewers. Count both types when deciding how many rounds fit.
  3. Check that two shallow bean dishes fit the oven with air space around them. Do not pour doubled ingredients into one deep dish and assume the same heating time.
  4. Choose rolling service or safe hot holding before inviting everyone to line up. If the equipment cannot support the plan, reduce the guest count or choose a different main.

Make a real shopping list

Open the complete twelve person menu

This opens a fresh menu for twelve regular adult portions with no added leftovers, replacing the saved plan. The recipes and guest count remain editable. Six skewer batches include six bell peppers, six small zucchini and three small onions as well as the chicken. Add fuel, drinks, ice and serving supplies separately.

Prepare in an order that respects the equipment

Make the cold salad ahead and refrigerate it. Prepare the bean pans for the oven. Cut and thread the skewers with clean vegetable and raw chicken preparation areas. Keep uncooked chicken refrigerated until its cooking round.

The beans use a 325°F oven and the skewers use a grill around 400°F. Start the beans using their own recipe window, then check the actual pan centers. Grill the skewers in the capacity you measured. Every chicken piece must reach 165°F, and a browned surface is not the check.

Use clean utensils for cooked chicken. Hold finished hot food at 140°F or above, and cold salad at 40°F or below. Replenish smaller serving dishes rather than leaving the full supply on the table for the afternoon.

Leave dessert optional

A purchased dessert is a valid choice when the grill work already fills the day. If making dessert, three four biscuit shortcake batches give twelve portions, with their own oven work planned separately.

Use the cookout checklist for safe transport, serving and leftovers. No fixed twelve person completion time is promised here.
