A little smoke, a hot finish

Smoked chicken with two cold sides

The chicken moves straight from the smoker to a hot oven. Keep the sides cold and ready so you can give that last cooking stage your full attention.

Starts a fresh plan for six adults with regular portions and no requested leftovers. Replaces the menu saved in this tab. Change people and appetites in the planner.

Two browned chicken thighs with skin and bone on an off white plate
At the starting setting
Six adults · One main · Two sides
Two cooking stages for the chicken
The chicken recipe estimates 55 to 85 minutes of cooking, plus preparation and 5 minutes resting. Six pieces and your pans can change the timing. Check every piece.
Know the extra food
No extra stated main portions at the starting setting. Full side batches make about eight portions of each side.

The extra food above comes from rounding up to whole recipes. It is not a second leftovers allowance. Serving counts are estimates and your actual portions may differ. Smaller groups still get whole batches, which can leave more food for another meal.

Give every dish a place

Check cooking space, cold storage and clean serving tools before committing to the menu. More batches may need more pans or another cooking round.

Smoker at 300°F
Space around six comparable thighs, plus a cooking chamber thermometer. Small thighs may need a different piece count.
Oven ready at 425°F
Enough rimmed metal pans and racks for six thighs without crowding. Heat the oven while the chicken smokes so there is no pause between stages.
Refrigerator and clean tools
Room for both cold salads, bowls, a colander, a food thermometer and separate utensils for raw and cooked chicken.

Make room for the finish

A useful order of work

This is a preparation order, not a tested shared timetable. Read the individual recipes and leave room for your food, batches and appliances to change the finish.

  1. Prepare the salads before raw chicken

Make one slaw batch and two pea salad batches with clean tools. Refrigerate at 40°F or below. The slaw needs at least an hour, while the pea salad may chill as the chicken cooks.

  2. Check the room for six thighs

Use the same recipe thickness and size as your starting point. Arrange enough pans and racks for the oven finish before heating the smoker to 300°F.

  3. Smoke, with space between pieces

Season all six thighs using three complete recipe batches. Follow the recipe’s smoking stage and begin checking early. The intermediate 145°F to 155°F reading means change cooking stages, not serve the chicken.

  4. Move straight into the hot oven

Preheat the oven to 425°F during smoking. Transfer directly to racks over rimmed pans and finish until each thigh reaches at least 165°F away from bone. Do not park partly cooked chicken while the oven heats.

  5. Rest, then bring out the sides

Move safely cooked chicken to a clean platter and rest 5 minutes as directed. Serve promptly. Stir the salads and bring out smaller bowls so the rest stays cold.

Build the full ingredient list

Replaces the menu saved in this tab with these three dishes for six adults.

Chicken counter
Six large thighs with skin and bone, about 8 ounces each. That is roughly 3 pounds of raw chicken, including bones.
Slaw bowl
One head of cabbage, mayonnaise, sugar, apple cider vinegar, salt and pepper.
Pea salad
Two 15 ounce cans of black eyed peas, 2 cups canned corn, 2 cups diced tomatoes, 4 scallions and parsley.
Pantry check
Neutral oil, olive oil, fresh lemon juice, paprika, garlic powder, thyme, salt and pepper. The planner lists every measured amount.

Serve the meal, then put it away

Every chicken thigh must reach at least 165°F in its thickest part, away from bone. The smoking stage’s intermediate temperature is not safe to serve. Keep both salads at 40°F or below.

Refrigerate perishable food within 2 hours, or within 1 hour when the air is above 90°F. Cool extra food promptly in shallow containers. Reheat leftovers to 165°F.

See USDA guidance on safe internal temperatures and cooling and reheating leftovers.
